Ice-cream is a favourite treat loved by adults and kids alike. So naturally I love showing moms and dads I work with how easy it is to keep the ‘treat’ feeling, and help reduce the sugar intake of the whole family.
It’s a process and healthy dessert is where to start!
Make a habit of throwing a bunch of bananas in the freezer, to have on hand and make this base. Yes, it’s still got sugar, from fruit, but it’s much less than what we’d normally have. And it’s free from other unnecessary additives and chemicals. If you’re doing my Mind Body Reset or The Mindful Detox programs, I’d suggest keep your intake low still (a serve would count as your sugar intake for the day), but it’s still definitely on the menu.
Time to make: 15 mins.
- 4-5 cups frozen bananas and strawberries (approx 3 bananas and the rest strawberries)
- 3 tsp vanilla extract or use equivalent vanilla bean
- 10 drops vanilla stevia
- 1 cup coconut cream
Optional: pour a few tablespoons of real whip cream if you want this to be more decadent and you are not off dairy, then also top with whipping cream. This can also be achieved with coconut cream but it just depends who you’re making this for 🙂 I tend to use a bit of real dairy when it’s for kids.
Place all ingredients in a Vitamix (you really need a good blender for this) and blend on low for about 5 minutes, on and off. Use a spatula to nudge it along, push the fruit around so it hits the blades, and blend until creamy. You can speed it up towards the end.
Serve immediately. Store extra in freezer, but keep in mind it will not stay soft and creamy so it’s better served right away. Sucks I know 😉
